Settings live on the Offers tab of the MAM WooCommerce settings page (WP admin; requires the MAM WooCommerce plugin to be active — without it the tab is absent and the defaults below apply). Leaving a setting unsaved keeps its default, so existing sites behave exactly as before.

Currency
Offer amounts display with your store’s WooCommerce currency symbol, and new offers record the store’s WooCommerce currency code — there is nothing to configure here.
Texts not covered by settings
The pending/approved status titles and messages (Offer Pending, Offer Approved, Review Pending Offer, …) can be customized in code via MAM Main’s mam_main_content_element_make_offer_args filter at a priority later than 1.
